Here's a Recipe: Slow Cooker Chili

Happy Friday to you all!!

It's getting chillier every day and it's time to break out the slow cooker. Today I'm going to share this chili recipe with you (originally found here).


Ingredients: (serves 4-5)

1 tbsp. olive oil
1/3 pound stew beef, in cubes
1 tbsp. chili powder (mine actually turned out a bit too spicy for my liking, so if you're not into hot food, add only 1/2 tbsp.)
1/2 tsp. cumin
1 tbsp. flour
1 small onion (or 1/2 large onion), chopped
2 garlic cloves, minced
1/2 green bell pepper, chopped
1/8 cup chopped fresh parsley
16-ounce can red kidney beans, drained and rinsed
28-ounce can diced tomatoes
1 cup beef broth
1 tbsp. BBQ sauce
1 tbsp brown sugar
Pinch of salt

Preparation: 

1. Heat the oil in a large skillet over medium-high heat. Add the meat and brown it for 2 min, stirring ofter. 

2. Add the chili powder and cumin and let the spices cook for another minute, stirring all the while. 

3. Stir in the flour and let the mixture cook for 1 more minute. 

4. Transfer the meat mixture to your slow cooker (mine is a 3.5L). Add the remaining ingredientes and stir well. Cover the cooker and let it all cook for 6-8h on low or 4-6 hours on high. If necesarry, thin chili with a little water or stock as it cooks. 

5. Enjoy!!
